Quick and easy savoury milk pie with onions

In Greece, when we talk about "milk pies" our mind goes mainly to sweet recipes. But there are also some savoury kind of milk pies and this is one which is very tasty and filling. In this version, no pastry is involved and that makes things easier and quicker to prepare and you can enjoy this pie as a light or main meal along with some salad. The thick, batter-like, filling gets into the pan and that's all! Normally this pie is only with onions but you can always add 1 tea-cup of grated semi-salted cheese in the batter which work nicely with the sweetness of the onions

Ingredients (for 4-6 people):
½ tea-cup of olive oil
1Kg of red (or yellow) onions, cut in thick slices
½ tsp of ground cinnamon
½ tsp of ground allspice
3 tea-cups of fresh milk
3 ½ tea-cups of all-purpose flour
4 eggs
1 small bunch of spearmint, finely chopped (or flat-leaf parsley)
salt
pepper
some oil for greasing the pan

Method:
Warm the oil in a non-stick frying pan on high heat. Throw in the onions and season with salt and pepper, the cinnamon and the allspice. Stir constantly with a wooden spoon until they are softened and down to 1/3 of their volume, getting a nice brown colour.

Preheat the oven to 180°C and brush with some butter the bottom and the sides of a medium-size round pan.

In a large bowl put the milk with the flour and the eggs and mix thoroughly until you have a batter. Add in the mixture the onions, the spearmint and the cheese (if used). Check the seasoning and add some more if needed.

Empty the mixture into the pan and put in the oven. Bake for about 1 hour until the mixture is set and a nice golden crust forms on the top. Take out of the oven and allow 10 minutes before you cut into pieces and serve.
