Adapted from a recipe leaflet of the Greek branch of "Hellman's" products
Ingredients (for 4 people):
4 chicken breast fillets, cut in cubes
300ml of tomato Ketchup (of your choice)
100ml of olive oil
1 clove of garlic, mashed (optional -my addition)
2 long sweet green peppers, cut in rings
2 yellow onions, finely chopped
100ml of white dry wine
150gr. of Greek Kefalotyri cheese, cut in cubes
1 pinch of dried oregano (optional -my addition)
1 bay leaf (optional -my addition)
1 pinch of red hot pepper
salt
pepper
Method:
Preheat the oven to 180ºC.
Warm the oil in a wide and deep non-stick pan on medium-high heat.
Sauté the chicken pieces until they start changing colour and then add in the pan the onions, the garlic (if used) and the peppers and sauté for 5-7 more minutes until the ingredients start softening.
Pour over with the wine and leave for a bit until the alcohol evaporates. Add in the pan the ketchup and the bay leaf (if used), gently stir and cook for another 5 minutes.
Add the cheese cubes and the oregano (if used), gently stir and empty the food into a pyrex dish.
Put in the oven and bake for 20-25 minutes until the food is nicely golden and the cheese softened enough but not fully melted.
