Mini savoury cakes with Graviera cheese and dried figs

A delicious snack for all seasons and all hours! Also a great idea for a buffet dish at a party

Ingredients (for 12 cakes):
3 eggs
3/4 tea-cup of olive oil
1 tea-cup of milk
160gr. of self raising flour
1 tsp of baking powder
1 tea-cup of Greek Graviera cheese, grated
150gr. of dried figs, finely chopped
1/2 tsp of dried rosemary, well crushed
1/2 tsp of dried thyme
salt
black pepper
1 tsp of pink pepper corns, coarsely ground

Method:
Preheat the oven to 180°C. Brush with some oil a muffin tray with 12 cases.

In a large bowl lightly beat with a whisk the eggs along with the oil and the milk. Add in the bowl the flour mixed with the baking powder and stir the ingredients well with a spatula.

Then add in the mixture the grated cheese, the figs, the herbs, the salt and the two peppers and stir again to blend well.

Equally divide the mixture into the cases, carefully place in the oven and bake for 25-30 minutes.

Take out of the oven and leave the cakes to cool down in the tray for a few minutes before you release them.

They can be served lukewarm or cold.

    1. Kids and adults as well, believe me! So convinient for a party, buffet, as a snack at home, school or at work... You can't stop at one, that's the problem:-))
