Ingredients (for 20 pieces):
5 phyllo pastry sheets
350gr. of anthotyro cheese (a block), cut in thin slices
cooking oil for frying
1 tea-cup of honey
1 tea-cup of finely chopped walnuts
ground cinnamon for dusting
Method:
Cut each phyllo sheet into 4 even strips, lengthwise.
Place each cheese slice in each pastry strip and fold into triangles (see instructions here).
In a deep frying pan warm the oil on medium-high heat and fry the pies until they are lightly golden on both sides. The cheese will be nicely softened inside but not melted.
Transfer with a slotted spoon on kitchen paper to drain the excess oil.
Then, while they are still warm, pour over with the honey. Sprinkle with the walnuts, dust with the cinnamon and serve immediately.
