Grilled Haloumi cheese with sweet wine and cherry tomatoes

A delicious and easy recipe to serve as a first dish along with some chilled wine. Feel free to substitute with feta or Kefalograviera cheese, if you want, but the taste will be different and also you should be careful with the salt. In my opinion, though, Haloumi is ideal for this recipe and you should try it out as suggested

Ingredients (for 4 people):
400gr. of Haloumi cheese, cut in 4 slices (from a block)
150gr. of small tomatoes on the vine
2 small red hot peppers, finely chopped (I used 2 red bell peppers and a pinch of hot paprika)
2 lemons, the juice
1 tbsp of fresh spearmint, finely chopped
2 tbsp of sweet red wine
6 tbsp of olive oil
1 tbsp of butter

Method:
Preheat the oven grill to its highest temperature. Line a baking sheet with baking paper.

Melt the butter in a non-stick frying pan on medium heat and saute the tomatoes, turning frequently with a spoon. When the tomatoes start getting glossy pour over the wine and leave to simmer until their skin starts splitting and the sauce is thickened.

Place the Haloumi slices on the baking dish and bake under the hot grill for about 8-10 minutes, turning once so to bake on both sides.

In a bowl whisk the oil with the lemon juice, the spearmint and the hot peppers until well blended.

Arrange the grilled Haloumi on a platter, drizzle with the olive oil dressing and garnish with the tomatoes along with their sauce from the pan. *** If you use the bell peppers instead, in the end sprinkle with the hot paprika on top.
