Salmon fillets with lemon, orange and mustard baked in baking paper

Although salmon is not one of our favourite fish there are some recipes which we really like and this one today is a good example. It is an easy, light and very tasty recipe to enjoy the fresh salmon along with some fresh green salad or steamed vegetables. Very fragrant too thanks to the aromas the lemon and the orange give to the fish

Ingredients (for 2 people):
2 fresh salmon fillets
100ml of mild mustard
1 large orange, the juice and the zest
2 large lemons, the juice and the zest
2 tbsp of finely snipped dill
80ml olive oil
coarse black pepper
salt

Method:
Preheat the oven to 180°C.

Put the fish fillets along with the rest of the ingedients in a large bowl and mix so they get completely covered by the marinade. Leave in the fridge for 30-40 minutes.

Place each fillet in a separate large piece of baking paper and pour over with the marinade from the bowl.

Wrap the parcels carefully and place on a baking tray with the seam side down.

Put in the oven and bake for 12-17 minutes. Unfold the baking paper and serve immediately directly from the parcel.
