Rich bundt cake with walnuts, spices and ouzo

This is a healthy and nutritious cake with low calories at the same time. The wholemeal flour used in this recipe turns this cake into a source of fibres and as a result satisfies our need for something sweet and limits our appetite. Ideal too for those who fast

Ingredients (for a 22cm diam. bundt cake pan):
½ tea-cup of corn oil
1 tea-cup of brown sugar
1 tea-cup of fresh orange juice
1-2 tbsp of ouzo
1 tbsp of ground cinnamon
1 tbsp of ground cloves
3 tsp of baking powder
½ tsp of baking soda
2 ½ tea-cups of wholemeal flour
1 tea-cup of roughly chopped walnuts

Method:
Preheat the oven to 180°C. Lightly grease a bundt cake pan of 22cm diam. and leave aside.

In the bowl of a food processor beat the oil with the sugar in low speed until well blended and creamy.

Add in the mixture the ouzo, the cinnamon and the cloves and alternately the orange juice with the flour, after having dissolved in the baking powder and the baking soda. Beat until the ingredients are well blended.

Add the walnuts and stir with a wooden spoon. Empty the mixture into the pan and put in the oven.

Bake for 45 minutes and check if the cake is done using a toothpick. Take out of the oven, leave the cake to settle for a few minutes in the pan and then turn onto a serving dish.
