Pork marinated in wine and coriander

A delicious recipe with pork, inspired by the traditional Cypriot recipe "Afelia". A dish full of aroma with mild spices giving a special taste. A recipe which you can also cook with rabbit, chicken or beef and which can be also served as a meze

Recipe of Dimitris Andreou,
from "Cook Book" magazine of "ETHNOS" newspaper

Ingredients (for 4 people):
1 Kg of pork thigh, cut in large cubes
2 tea-cups of red wine
2 tbsp of coriander seeds, coarsely ground
2 cinnamon sticks
1 tsp of black peppercorns
6 tbsp of olive oil
salt
pepper

Method:
In a large bowl put together the meat, the coriander, the cinnamon, the coarse pepper and the wine, making sure the meat is well covered by the wine. Cover the bowl with cling film and leave in the fridge to marinade all night.

Next day, take the meat pieces out of the marinade and pat dry, keep the marinade on the side.

Warm the oil in a spacious (not too deep) pot on high heat. Brown the meat well on all sides and pour over with the marinade.

Turn the heat down to medium/low, cover the pot with the lid and slowly cook the pork until it is completely tender and is left with a nice sauce.

Serve immediately along with mashed or steamed potatoes or plain rice pilaf.

And I thought that only the Greeks we are a bit "weird" about eating "weird" parts of an animal... but not "pig eye balls"!!:-)) I will definetely visit your blog to check out the recipe! Thanks for the visit and the comment. Have a nice weekend:-))
