Fried eggs on tomato sauce

This simple but so delicious dish brings back childhood memories..... and it used to be one my favourite Saturday lunch or dinner dishes when not much cooking was taking place at home




Ingredients (for 4 people):
2 cups of fresh tomatoes, grated
2 tbsp of olive oil
salt
pepper
2-3 pinches of sugar
1 pinch each dried thyme, oregano and basil
4 medium eggs
2 tbsp of grated cheese (optional)

Method:
In a spacious and deep frying pan put the olive oil, the tomatoes, the sugar, the herbs and season with salt and pepper. Leave the ingredients to come to the boil on medium heat and simmer until the sauce is slightly thick.

Crack the eggs above the tomato sauce, cover the pan with a lid, turn the heat to low and cook for about 2-5 minutes depending how well cooked you prefer the eggs.

Take off the heat, turn the eggs onto a plate along with the sauce, season with some more pepper, sprinkle with the cheese and serve immediately with fresh crusty bread.

Note: Instead of grated cheese you can serve with feta cheese on the side and instead of fresh tomatoes you can use store bought ones and when it is cooked you add the eggs.  Often this dish is served with thick Greek yoghurt on the side if instead of the herbs, red pepper is used.
