It is the drink we make out of the juices of the sour cherries - as I was telling you about in the relative recipe. It is a non alcoholic drink, tasty and very pleasant for the hot Summer days
Ingredients (for 2 X 700ml bottles):
1.500gr of sour cherries
1Kg of sugar
2 lemons, the juice
200ml of water
Method:
Wash the sour cherries very well, discard the stems and the pips with the help of a cherry pitter.
In a large saucepan put the sugar with the water and boil in medium heat until the syrup has set. If you have a jam thermometer it should get to 125° C. Otherwise, if you pour a bit of the syrup in water it should form a kind of soft mass.
At this point add the sour cherries and the lemon juice into the saucepan. Let them boil for 5 more minutes (always in medium heat), take away from the heat and let the mixture for 5 minutes to cool down.
Get a fine sieve and stabilize it over a large bowl. Put the cherry mixture in and press very hard with your hands so all the juices of the cherries will drop into the bowl.
Divide the cherry syrup into sterilized bottles and keep them in a dark place or in the fridge.
Fill the 1/6 of a water glass with the cherry syrup, add ice-cold water and some ice cubes. Stir well so to dissolve the syrup and serve.
