Ingredients (for 4 people):
1 large whole octopus (fresh or frozen)
1 large ripe but firm tomato, cut in slices
2 tbsp of plain vinegar
3 tbsp of olive oil
black pepper
red pepper
salt
Method:
Clean and wash the octopus and put it in a large saucepan.
Let it simmer in low heat in its own liquid without adding any water until it softens.
When it is ready take it out of the saucepan and cut the hood and the tentacles into medium size pieces.
Heat the olive oil in a heavy bottomed frying pan in medium heat. Add the octopus pieces and sauté for a few minutes, stirring with a wooden spoon. Add the vinegar and stir.
Place the tomato slices on top of the octopus, cover with a lid and let it cook for 15-20 minutes.
Take the lid off and season with the red and the black pepper, very little salt and let it cook uncovered for an extra 10-15 minutes until the liquid is evaporated and you end up with a caramelised sauce.
Serve immediately as a meze or along with fries or a rice pilaf.
