Strawberries Spoon Sweet

After that huge article about the Greek "Spoon Sweets" it's time to give you some of the nicest recipes related to them. Lets start with the tasty strawberries and soon you'll get more of that



Ingredients:
1Kg of large ripe but firm strawberries
700gr.-1Kg of granulated sugar
1/2 tea-cup of brandy
2 tbsp of lemon juice

Method:
Wash and clean the strawberries.

Put them in a large heavy bottomed saucepan with the sugar in layers (one layer of berries - one layer of sugar). When the berries and sugar are finished, pour over with the brandy.

Cover the saucepan with its lid and put in the fridge the whole night so the berries free their liquid.

Next day put the saucepan in medium heat and when it gets to the boil, we let the berries cook for 2 minutes while we take off the scum on the surface with a wooden spoon. Take off the heat and let it cool completely.

After it is cooled down, strain the strawberries over a colander and put the syrup back to the saucepan in medium heat until it gets thick and sets. When this is done transfer the strawberries back to the saucepan together with the lemon juice and leave the spoon sweet to boil for 4-5 minutes more and it is ready.

Divide in sterilized jars and when it is totally cold keep it in the fridge. It keeps better and it is tastier when it is cold.



Because the strawberries are quite sensitive fruits it is better to prepare in small quantities because this way you can control the boiling better.
