One of many many different recipes we have in Greece for cookies. This recipe is quite easy and with not too many ingredients involved. A classic Greek cookie to accompany your tea or coffee
Ingredients:
150ml of red dry wine
1 wine-glass of cooking oil
1 wine-glass of sugar
1/2 wine-glass of sesame seeds
1 ½ tsp of baking powder
about 600gr. of all-purpose flour
1 orange, the zest
1/4 tsp of ground cinnamon
Method:
Preheat the oven to 180°C.
In a large bowl put the wine, the ground cinnamon, the oil and the sugar and stir the ingredients for a while with a wooden spoon to dissolve the sugar. Add the sesame seeds, the orange zest, the baking powder and gradually add the flour.
Start kneading the dough but be careful not to add more flour than it is necessary. Once the dough doesn't stick to the hands, it is ready.
Allow the dough to rest for half an hour and then picking a small amount each time start shaping the cookies, giving the shape you want. They can be round, oval, twisted or any other shape.
Line a large oven dish with baking paper and place the cookies on it, leaving a little space between them.
Put in the oven and bake for about 40-45 minutes (depending on their thickness), or until they are crispy and golden in colour.
Leave them to cool on racks and then store in airtight containers or tin boxes. They can keep fresh for a couple of months.
