Fried pork bites in vinegar sauce

A delicious recipe which can be served anytime of the year and in various forms. It is excellent as a main meal along with fries and salad but as a meze is even better along with a good red wine. Simple and few ingredients which get together nicely with a great result



Ingredients (for 4 people):
1Kg of pork shoulder (no bones), cut in bite-size pieces
½ tea-cup of plain vinegar
½ glass of red (or white) dry wine
salt
pepper
1 tsp of dried oregano
½ tea-cup of olive oil

Method:
Put the meat in a bowl, add the vinegar, season with plenty of salt and pepper, sprinkle with the oregano and leave in the fridge for 2-3 hours to marinate.

Warm the oil in a spacious heavy-bottomed frying pan on medium heat. When it is well warmed empty the meat in along with its juices.

Turn the heat to medium-low and leave the meat to simmer for 30-35 minutes until the juices are evaporated and starts to get tender.

Then add the wine and stir until the alcohol evaporates and the meat gets nicely browned on all sides.

When the meat is ready transfer on a platter along with the juices to share as a meze or individual plates and serve while it is still hot.
