Ingredients (for 4 people)
For the fruit:
4 large ripe peaches
For the fruit:
4 large ripe peaches
2 tbsp of butter
3 tbsp of granulated sugar
For the sauce:
1 pot of Greek thick yoghurt (175-200 gr.), chilled
1 tbsp of honey
fresh spearmint leaves, finely chopped
Method:
Peel the peaches, open in half and discard the stone. Then cut each half in two.
Melt the butter in a spacious and heavy-bottom skillet on high heat. Sauté the peaches carefully, turning them once and then sprinkle with the sugar. When the sugar with the fruit juices form a dark caramelised syrup take the the peaches off the skillet. *** The sautéing of the peaches should not last longer than 10 minutes in total.
Put in a bowl the yoghurt, the honey and the chopped spearmint and mix thoroughly with a whisk.
Serve immediately on dessert plates along with the chilled yoghurt sauce.
