Easy ginger and aromatic spices honey biscuits

The main ingredients of aromatic mild spices, some of my favourite ones like cloves and cinnamon and ginger for extra flavour, give a subtle "kick" to these tasty biscuits. Biscuits which can be a great snack for all hours to enjoy with your coffee, tea or milk. The only thing you have to keep in mind with these cuties is that their texture is something between a biscuit and a cookie. Don't make the mistake I made first time:-)) Not too hard or not too soft so keep an eye on the baking time

Ingredients (for about 30 biscuits):
2 tea-cups of all-purpose flour
1 tsp of baking powder
1 ½ tsp of baking soda
1/2 tsp of salt
1 tbsp of ground cinnamon
1/2 tsp of ginger powder
1/4 tsp of ground cloves
125 gr. of butter, softened
2/3 tea-cup of granulated sugar
1/4 tsp of vanilla extract
1/4 tea-cup of honey
1 egg
extra granulated sugar and ground cinnamon to sprinkle

Method:
Put in a bowl the flour, the baking powder, the baking soda, the salt, the cinnamon, the ginger and the cloves and stir to blend.

In a large bowl beat with an electric hand-mixer the butter with the sugar until they become creamy and fluffy. Add the egg, the honey and the vanilla.

Then, gradually while you keep beating, add the flour/spices mixture. Then knead the ingredients with your hands until you have a soft dough.

Preheat the oven to 170°C. Lay two baking dishes with some baking paper.

Take the dough and place it between two pieces of waxed paper which you have lightly dusted first with flour.

Using a rolling pin stretch the dough into a large sheet. Using a cookie cutter of 5 cm diameter cut discs of the dough and transfer on the baking dishes.

Sprinkle on top with the granulated sugar and the cinnamon and put in the middle shelf of the oven. Bake for 10-12 minutes. *** Don't exceed the baking time because they will turn hard.

Remove from the oven and allow the cookies to cool down on metal racks before you serve and store in air-tight containers or metal boxes.
