Refreshing melon sorbet scented with vodka and rosewater

Refreshing, fragrant and very tasty sorbet! Admittedly this one is an adult version since vodka is included... Melon is one of the most popular Summer fruits in Greece and here is the main ingredient of this recipe. What makes this classic sorbet special are the vodka and the rosewater which both give an extra aroma and taste

Recipe of Fotis Chryssanthidis
a young talented Pastry Chef

Ingredients (for about 900gr. of sorbet):
600gr. of melon, cut in pieces (weighed without the skin and the pips)
60ml of vodka
20ml of rosewater
150gr. of granulated sugar
150ml of water
1 tbsp of lemon juice

Method:
Put the melon, the vodka and the rosewater in a blender and work the ingredients until the melon is completely mashed and blended with the liquids.

Put in a saucepan the sugar, the water and the lemon juice. Boil the ingredients on medium heat for 1-2 minutes or until the sugar is completely dissolved and take off the heat. Transfer the saucepan in the fridge and leave the syrup to chill very well.

Empty the melon mixture into a bowl and add the syrup. Mix well with a whisk and then transfer the mixture into an ice cream maker.

Follow the instructions of the machine accordingly.
