Recipe of Fotis Chryssanthidis,
a promising young pastry chef in Greece

Ingredients (for about 500-600gr.):
225gr. muscovado sugar
130gr. unsalted butter
1 medium egg (about 50gr.)
300gr. of all-purpose flour
1 tbsp of baking soda
15gr. of ground cinnamon
Method:
Preheat the ove to 160-170°C.
In the bowl of a food processor beat all the ingredients together, with the appropriate tool, until you have a well blended dough. Transfer the bowl with the dough in the fridge and leave to rest for about 1 hour.
Lay a couple of baking sheets with baking paper.
Dust a clean surface with some flour, transfer the dough on it and shape into a smooth ball.
With a rolling pin roll the dough out into a disc, no more than 3mm thick. Using a sharp knife or a cookie cutter cut the dough into square (or other shape) bisquits.
Transfer the bisquits on the baking sheets leaving a bit of space between them. Put in the oven and bake for 12-15 minutes.
When ready, take out of the oven and leave them to cool on racks before you store them. They can stay fresh if stored in tin boxes in a dry place.
