Easy pasta salad with smoked salmon and lime

Tasty ingredients for this easy salad which can also be served as a light meal on its own. All the ingredients come together very well. The slightly piquant dressing gives something extra in flavour and the herbs balance the things out nicely. It can become one of your favourite dishes!


From a recipe leaflet of the Greek oil and margarine products "ELAIS"

Ingredients (for 4 people):
1 cup of multi-coloured fusilli pasta
1 vegetable stock cube
½ a cup of honey and mustard salad dressing (of your choice)
¼ tsp of finely snipped dill or fennel fronds
3 tbsp of finely chopped yellow onion
2 tbsp of finely snipped chives
¼ cup of red bell pepper, cut in cubes
1 tbsp of lime juice
black pepper
salt
220 gr. of smoked salmon, cut in strips

Method:
Put plenty of water in a large pot, throw in the vegetable stock cube and boil the pasta according to your preference. Drain in a colander, rinse with some water and keep aside for later.

In a bowl put the salad dressing, the dill, the onion, the chives, the lime juice, the red pepper and season with salt and pepper (don't over do it with the salt because of the salmon). Beat the ingredients well with a whisk to blend.

Transfer the pasta in a salad bowl and pour over with the dressing. Gently but thoroughly toss with two spoons. Top with the salmon and cover the bowl with cling film. Leave in the fridge for 1 hour before serving.
