Easy and fast yoghurt and melon "ice cream" flavoured with thyme

It is easy indeed this yoghurt based ice cream with all the aroma and the distinct taste of melon! Delicious idea and without too many calories to enjoy a refreshing dessert. Here the quantity is for two people but easily you can adjust it to match the number of people you want to treat

Ingredients (for 2 people):
1 pot (about 170-200gr.) of Greek thick yoghurt
½ a melon (variety of your choice), cleaned and cut in medium pieces
2 tbsp of honey
½ tsp of lemon juice
1/4 tsp of fresh thyme leaves, finely chopped

Method:
Put all the ingredients in a plastic bowl with a lid and mix thoroughly to blend. Cover with the lid and transfer to the freezer for at least 3 hours or until it is well frozen.

Take out of the freezer and turn the mixture on to a chopping board. ***If you have any difficulties, just briefly dip the bowl into hot water.

Cut the mixture into pieces and transfer in the bowl of a standing mixer.

Beat the ingredients thoroughly until the mixture reaches a creamy consistency and empty back to the plastic bowl.

Cover with the lid and leave in the freezer for about 30-40 minutes to chill again and then serve.
