Pasta with spearmint, feta cheese and oregano pesto

Inspired by the Italian sauce this pesto is full of Greek taste and aromas. Refreshing spearmint, tasty feta cheese and oregano come together perfectly and give a delicious flavour to this sauce which will make your pasta very happy! So easy and fast in procedure you will enjoy your meal in no time!

Ingredients (for 4 people):
500gr. of Greek Hylopites pasta, the long type (or tagliatelle or linguine)

For the pesto:
200gr. of feta cheese, crumbled
1 tsp of dried oregano
60ml of olive oil
1 tbsp of pine nuts, toasted on a pan until golden but not browned
1-2 cloves of garlic, cut in half
1 tea-cup of fresh spearmint leaves

Method:
Put all the pesto ingredients in a blender and whiz until they come together and form a not too thick paste.

Boil the pasta according to your preference and drain in a colander keeping aside a tea-cup of the water they boiled in. Transfer the pasta back to the pot and add in the pesto.

Gently but thoroughly stir the pesto with the pasta making sure it is well coated. If the pesto looks a bit too firm add in the pot a little bit of the boiled water and stir again.

Serve immediately sprinkling on top with black pepper.
