Adapted from "Cook Book" magazine of "ETHNOS" newspaper
Ingredients (for 4-6 people):
1Kg of Anthotyro cheese, mashed with a fork
500gr. of Greek Kefalograviera cheese, grated
500gr. of Greek Kasseri cheese, grated (or Gouda)
2 eggs
4 tbsp of all-purpose flour
1 pinch of sweet paprika (optional -my addition)
1 tbsp of finely snipped dill or finely chopped fresh spearmint (optional -my addition)
white pepper
plenty of corn oil for frying
Method:
Put all the ingredients in a large bowl and mix very well with a spoon until you have an easily pliable mixture - not too firm. In case it is too firm, thin it out with a little bit of single cream but be careful not to make it runny!
Then, take pieces of the mixture in your hands and shape into walnut-size balls. Transfer the croquettes on trays and leave in the freezer for 1 hour so to get firm.
Take the croquettes out of the freezer and fry in hot oil, turning them around with two spoons until they are golden brown on all sides.
Transfer with a slotted spoon on kitchen paper to drain and serve while they are hot.
