Easy crustless pie with 3 cheeses and ham

Easy, fast and delicious recipe which you can enjoy as a snack or along with a nice green salad for a light meal. Inspired from traditional recipes of this type from around Greece, it takes a slightly different form due to the addition of the ham



Adapted from a recipe of Dina Nikolaou,
a prominent Head Cook, food writer and restauranteur in Athens and Paris

Ingredients (for 6 people):
1 tea-cup of self-raising flour
1 tea-cup of strained Greek yoghurt
½ tsp of margarine
1 tbsp of baking powder
3 eggs, lightly beaten
1 tea-cup of finely chopped ham
1 tea-cup of feta cheese, crumbled
1 tea-cup of Kasseri cheese, grated
1 tea-cup of Greek Graviera cheese, grated
1-2 tbsp of fresh spearmint, finely chopped (or chives) (optional -my addition)
250ml of fresh milk
1 vegetable stock cube, rubbed with your fingers into powder
½ tea-cup of finely chopped flat-leaf parsley
pepper
sesame seeds

Method:
Preheat the oven to 180°C. Grease with some butter a medium size pyrex dish.

In a large bowl put the flour, the baking powder, the yoghurt, the margarine and the eggs and stir very well.

Add the cheeses, the ham, the milk, the cube and season with pepper. Stir well and empty the batter into the pyrex dish.

Sprinkle on top with the sesame seeds and bake in the oven for 45 minutes or until golden brown.

Take out of the oven, leave the pie 10 minutes to rest and cut in pieces.
