Cinnamon flavoured easy carrot jam

It's not many years since I first discovered how tasty carrot jam can be. A friend made some and offered me a small jar to taste it. It is an easy recipe to follow and of course because of the availability of the carrots it is a jam that you can have any time of the year without needing to fill a lot of jars and overload your fridge or your cupboards



Ingredients (for a small to medium size jar):
400gr. carrots, peeled and coarsely grated
170ml of water
260gr. of brown sugar
1 cinnamon stick
small pinch of ground cinnamon
3 tbsp of lemon juice

Method:
First of all prepare your jar by sterilizing it with your preferred method.

Put the carrots and the water in a spacious pot and boil on medium heat for 20 minutes.

When the water is evaporated add the sugar, the cinnamon stick, the ground cinnamon and the lemon juice. Continue boiling the jam for another 10-15 minutes, stirring with a wooden spoon often until the sugar is dissolved completely and taking the froth off the surface.

When the jam is properly set discard the cinnamon stick and carefully transfer it into the sterilised jar. When it is completely cool, store it in the fridge.
