Spicy hot chocolate drink

While the fresh cream is pouring and the chocolate melts, when the sugar gets nicely blended with the dark rum.... sprinkle with aromatic powders and make some delicious sweet and spicy miracles for the Winter time

From "BHMAgourmet" magazine of "TO BHMA" newspaper (2010)

Ingredients (for 4-5 people):
200ml of fresh cream, 35% fat
¼ tsp of ground cinnamon
¼ tsp of ground cardamom
¼ tsp of ground ginger
200gr. dark chocolate (70% of cocoa solids), cut in pieces
500ml fresh milk, full fat

Method:
In a pot boil the cream with the spices in medium heat.

Put the chocolate pieces in a deep bowl, pour over with the hot cream/spices mixture and stir with a spatula until the chocolate melts and the ingredients blend well. *** This mixture you can keep in the fridge for up to 1 week.

To make the hot drink, put the milk in a pot to boil in medium heat. When it starts boiling, take off the heat and pour it into the bowl with the chocolate mixture.

Leave the mixture for 5 minutes to settle and stir very well with a large spoon (or even better with a hand mixer) until the ingredients come together.

Serve immediately in cups or short glasses sprinkling on top with some cocoa powder.
