A very tasty and not difficult recipe for savoury cookies for something different to accompany your tea or to enjoy as a snack
Ingredients (for 60-65 small cookies):
420gr. of all purpose flour (unsifted)
250gr. plain cream cheese, at room temperature (or the same amount of Greek yogurt)
225gr. salted butter, at room temperature
1/2 tsp of baking powder
1/4 tsp of salt
1 egg yolk
white sesame seeds
black sesame seeds or nigella seeds (optional)
Method:
In a big bowl lightly beat the cream cheese with the butter (or yogurt). Add the flour, the baking powder and the salt. Using a wooden spoon mix the ingredients as much as you can to start achieving a dough and then keep mixing with your hands until the ingredients are well blended.
In a small plate lightly beat the egg yolk with a few drops of water. In another plate put the sesame seeds and a third of the black sesame seeds.
Preheat the oven to 180°C. Line baking sheets with baking paper.
Take a small amount of dough and roll it out first in your palms and then on a clean surface until about 7-8cm long. Then, shape into small rings or other shapes. Continue making cookies until all the dough is used.
***Don't delay to shape the cookies because the longer you take, the softer the dough becomes and it won't be easy to handle it. Try to keep the size of the cookies more or less the same so they will bake evenly.
Dip each cookie first into the egg wash, then the sesame seeds and last into the black caraway seeds.
You can coat one or both sides of the cookies and then place them on the baking sheets.
Bake the cookies for about 30 minutes, until they are golden on top.
Transfer them on a rack and allow them to cool completely before you save them in an airtight container.
