Homemade Pomegranate liqueur

Beside all the vegetables and fruits the Geeks like to preserve and make spoon sweets and jams out of them another obsession of ours is to make home made liqueurs. Here is the first recipe for you and others will follow. A liqueur which adds something special to the long list of your Christmas treats for your guests but which you can keep serving and enjoying long after the festive season

Recipe of Argyro Barbarigou,
a prominent Head Cook

Ingredients:
1Lt of pure alcohol or vodka
500ml of Brandy (cognac)
600gr. of sugar
1 cinnamon stick
6 large pomegranates, trimmed (the arils)

Method:
In a large sterilised jar with a lid add all the ingredients and shake to blend well.

Shake the jar frequently until the sugar melts. The liqueur needs to mature and it will take about 20-25 days to get to this stage.

Once the sugar is melted the liqueur is ready.

Strain the liqueur in a very fine sieve and then divide in liqueur bottles. Keep them in a cool and dark place, away from the sun.

If the colour is not deep red enough you can add 2 tablespoons of grenadine in the mixture.
