Mashed potatoes with leeks

An easy and very tasty variation of mashed potatoes. Great idea to accompany any roast meat or poultry dish. A more modern version which can be served along with other delicious dishes on the table during the Festive season but not only then

Ingredients (for 6-8 people):
8 medium to large size potatoes, boiled with their skin on and then peeled
3 tbsp of butter
1/2 a large leek, finely chopped (only the white part)
1 water-glass of milk
75gr. of yoghurt
salt
pepper

Method:
Mash the potatoes and put them in a blender.

In a frying pan melt the butter and sauté the leek on medium heat until it gets soft.

Add the leek along with the butter from the pan into the blender. Then add the milk, the yoghurt, salt and pepper.

Beat the ingredients all together until they blend well and you end up with a smooth puree.

If you think it is very thick you can add a bit more milk and stir.

Serve immediately.
