Chilled apple cream with vanilla-flavoured mascarpone cream and grape must cookies crumble

An easy, light and delicious recipe which is very much into season now! A great dessert to serve after a rich meal with the sweet and sour apple cream coming together perfectly with the smooth buttery mascarpone cream and the cookies crumble!

Ingredients (for 4 people):
4 large apples, peeled and cored
½ a lemon, the juice
2 tbsp of brown sugar
1 pot of mascarpone cheese
½ a vanilla pod, the seeds
1 tbsp of granulated sugar
3 grape must cookies (or ginger cookies)
½ tsp of ground cinnamon

Method:
Cut the apples into large chunks and put in a saucepan along with 1 glass of water, the brown sugar and the lemon juice.

Boil the ingredients in low heat for about 10 minutes or until the apples are soft.

Transfer the apples and their syrup into a blender and whiz until they are completely mashed and become a velvety mixture. Leave the cream in the fridge to chill.

In a bowl put the vanilla seeds, the mascarpone cheese and the granulated sugar and mix thoroughly.

Crush the cookies into a blender until they become like powder.

Divide the apple cream in bowls (or glasses) and spoon over with a generous dollop of the mascarpone mixture.

Sprinkle on the top with a generous spoonful of the crushed cookies and some ground cinnamon.

Serve immediately.
