FESTIVE SEASON 2013-2014: Baked baby potatoes flavoured with citrus fruits

A different but delicious version of the classic side dish which can be served next to the Festive turkey or other roasted meat during the Holidays but which, of course, are perfect for every season and occasion!

Ingredients (for 6 people):
500gr. baby potatoes, skin on
coarse salt
1 orange, zest and juice
1 mandarin, zest and juice
2 tbsp of mustard
2 tbsp of granulated sugar
100ml white dry wine
4 tbsp of olive oil
50gr. butter
freshly ground black pepper

Method:
Preheat the oven to 220°C.

Wash and scrub the baby potatoes very well until their skin is soft and squeaky clean.

Boil them in a large pot with plenty of water and coarse salt for about 10 minutes. Drain in a colander and while they are still hot, transfer into a large bowl.

Add in the bowl the rest of the ingredients and toss with your hands very well so they get evenly buttered, oiled, flavoured and seasoned.

Spread the potatoes in a shallow roast tin and bake in the oven for about 20-25 minutes until tender but not mashy and evenly coloured.

Serve immediately while they are still hot.

Note:
You can replace the fruit juices (keeping the zest though) with lemon juice and fresh rosemary.
