SOUP WEEK 1: Creamy walnut soup with herbs

Autumn is back already and soon Winter will smile at us... It is time to get prepared for tasty and hearty dishes like the soups. Here is a rather unusual recipe but very tasty and nutritious with the walnuts as the main ingredient. Nuts are not only to keep us company while watching a game or having drinks with friends, they can become a special ingredient in various sweet or savoury dishes. They have an intense taste and a rich texture and they give an extra flavour in savoury dishes like this thick, velvety soup

Ingredients (for 4 people):
350gr. of walnuts, finely ground
250ml single cream
1 litre of chicken stock
½ a bunch of flat-leaf parsley, finely chopped (or other wild herbs of your choice)
½ a bunch of chives, finely chopped
salt
pepper

Method:
Put in a bowl the cream and add the walnuts. Stir well until you have a thick paste.

In a large pot put the chicken stock and warm in medium heat. Add the walnuts mixture, the herbs and stir well to blend.

Season with salt and plenty of pepper and simmer the soup in low heat for a few minutes until it is quite thick.

Serve immediately in warm soup-plates (or bowls) and accompany with freshly toasted bread or pitta bread cut in wedges.

Note:
This soup can be also served during the Summer but chilled.
