Mixed cabbage salad with raisins, pomegranate and pine nuts

A quick, tasty and nutritious Winter time salad to accompany your main dishes. Cabbage is a very popular vegetable in Greece and is used in so many different recipes as an ingredient for salads or cooked. This recipe is inspired from the classic "Cabbage salad à la Polita" and the different flavours balance together very well. Consider it as a nice alternative idea for the Christmas dinner table



Ingredients (for 3-4 people):
500gr. white cabbage, finely chopped
500gr. red cabbage, finely chopped
1 cooking apple, grated (skin on)
1 pomegranate, the arils
4 tbsp of black raisins
1/2 tea-cup of pine nuts, toasted
6 sun-dried tomatoes, finely chopped (from a jar with oil)

For the dressing:
1/2 tea-cup of olive oil
3 tbsp of balsamic vinegar
1/2 an orange, the juice
1 tsp English mustard
1 tsp of honey
a pinch of salt

Method:
In a deep salad bowl combine the two cabbages with the grated apple, the pomegranate arils, the pine nuts, the sun-dried tomatoes and the raisins. Toss together well and leave aside.

Put the dressing ingredients in a blender and whizz until you have a nice and smooth mixture.

Pour over the salad, season with salt, stir well and serve immediately (be careful with the salt because the tomatoes will be salty already).

Note: If you like, you can also add in the salad some grated carrot.
