Saganaki with shrimps in tomato sauce

I explained to you what "saganaki" is all about and today we have sea food cooked in this way. An easy and quick recipe to make because shrimps don't need much time to cook. Very tasty meze to share with friends while drinking some good quality ouzo



Ingredients (for 3-4 people):
500gr. big shrimps or prawns cleaned (if frozen then thaw under cold water)
1 vegetable stock cube
1-2 tbsp of fresh dill, chopped
2 tbsp of olive oil
50ml ouzo
4 tbsp tomato pulp
1 green bell pepper, diced (optional)
250gr. hard feta cheese, crumbled
pepper

Method:
In a saganaki pan or another heavy bottomed (medium sized) pan heat the olive oil, in medium heat. Add the diced pepper (if used) and sauté, stirring until it starts to soften.Throw in the shrimps and the vegetable stock cube - crumbled and sauté, stirring gently.

Pour on the shrimps the ouzo and let the alcohol to evaporate a bit.

Add the tomato pulp, pepper and the dill, lower the heat to medium and let the food  simmer for about 10 minutes.

Add the feta, stir gently once and serve immediately as it is in the pan.
