The fastest pizza ever!
We know very well that beside the original base for a pizza other easier ways can be used to gain us time and have this luscious food ready in no time! But I never thought we could have a pizza using a simple batter mixture as a base! When I first saw the recipe a couple of years ago it really intrigued me to try it out. Then, I was a bit hesitant to be honest because I was not sure how it would turn out and a bit worried because I had seen comments complaining about the strong smell of the egg... Well, I don't know about other people, but the times I have done the pizza in this way I didn't have any problems with it! I find it a clever idea and a great help for those who feel a bit intimidated by homemade pastry making. The topping is only an indication of course, you can choose the ingredients you like most and add on top of the pizza

Batter fried mussels with saffron and paprika
Mussels, although in general, are not the first choice of seafood in our family cooked in this way makes them really tasty and really attractive to eat as a meze! I know mussels have a great number of fans and I thought that this recipe is a great example of a really tasty meze-dish to enjoy with your ouzo or chilled wine

Cabbage and leeks cheese pie
Pies all over Greece are such a popular meal regardless the season and they exist in countless combinations! They have been a staple since forever and especially in old days pies were (and still are in a way) the quintessential dish of Greece’s own "cucina povera". The seasonal filling at the moment is wild greens of all kinds along with herbs and making a pie is a great idea not only to have a snack in hand but a main meal as well when combined with a salad or something else. In this recipe the various vegetables work together very well and the two cheeses balance the flavour in the best way

Little cakes filled with lemon cream and Aegina pistachios
Easy and delicious mini cakes to enjoy with your coffee and tea, to serve at a kids party or to have it as a snack any time of the day. If you double the quantities of the ingredients you can make a whole cake, baking for 60 minutes. When it is cold, cut the cake in half (lengthwise), spread between the two pieces the lemon curd and sprinkle on top with the pistachios
