Kasseri cheese pie with kataifi pastry

The "Kasseri" cheese is a very popular traditional cheese in Greece which though, can be found in other Balkan countries and Turkey of course. It is a very tasty pale yellow, medium-hard cheese with a quite characteristic flavour. It is made from unpasteurized sheep milk and with very little, if any, goat's milk mixed in. The texture is rather creamy,more stringy than crumbly, a bit chewy and belongs to the same family of cheeses with the Italian "Provolone". Actually, the first time I had the mild Tesco-own (chain of Super Markets in the UK) cheddar cheese reminded me of the Greek Kasseri. The name "Kasseri" produced in Greece is a protected designation of origin in the European Union. "Kasseri" can be used in various ways in Greece. We love having it sliced in fresh or toasted sandwiches because of its ability to melt nicely and as the main ingredient in the "Kasseropita pie", fried in the classic "saganaki" dish and in various omelettes. The following recipe is the most common and most popular of the pies where Kasseri cheese is involved and it can also be made with the classic phyllo pastry sheets or even puff pastry
