Fried eggs on crusty rustic bread

So simple, so easy and fast but sooo delicious to enjoy for breakfast or a light meal!! Classic recipe, bringing back childhood memories when ingredients like butter, eggs and bread were still so "pure" and when still people were not so worried about cholesterol, calories and all these evil things that nowadays give us nightmares and make us feeling guilty....

Ingredients (for 2 people):
4 eggs
2 large slices of stale rustic bread (or 4 smaller)
½ tea-cup of olive oil (or 2-3 tbsp of butter)
1 tsp of sweet ground paprika
salt
pepper

Method:
Warm the oil in a large non-stick frying pan on medium heat. When it is well heated add the bread slices and fry until they get nicely coloured on both sides.

Turn the heat on medium-low and carefully break the eggs on top of the bread. Season with salt and pepper and cover the pan with a lid. Cook until the eggs are cooked to your preference.

***The secret in this recipe it is simple but essential, not to overcook the eggs so to have the pleasure of the egg yolk running on the bread afterwards!!!

Sprinkle with the paprika and serve immediately.

Note:
For a fuller meal, along with the eggs you can add in the pan 1 tea-cup of yellow grated cheese of your choice (or crumbled feta cheese) or/and thinly sliced sausage (earlier cooked on its own in a non-stick frying pan).
