No-oil mixed green salad for Good Friday

One more recipe for those who follow the Holy Week fasting to the letter and they don't eat any oil. A refreshing and quite filling salad with plenty of vegetables and herbs. The dressing, even without any oil in, is very tasty and helps the vegetables to free their aroma and flavour

Ingredients (for 4 people)

For the salad:
4 small tender endives
1 bunch of rocket leaves
1 bunch of chervil (or shepherd’s needle)
5 Spring onions
1 bunch of wild radish leaves
5-6 small button mushrooms, cut in thin slices
10 dried prunes, cut in half
salt
pepper

For the dressing:
1 large orange, the juice
1 tbsp of lemon juice
2 tbsp of red-wine vinegar
2 tbsp of roasted sesame seeds
1/2 cup of finely chopped walnuts
3 tbsp of honey

Method:
Roughly chop all the greens and place them in a large salad bowl.

Add the mushrooms and the prunes and toss with your hands.

In a small bowl beat the dressing ingredients with a whisk and pour over the salad. Season with salt and pepper and mix with two spoons.

Serve immediately.
