Stuffed aubergines with bulgur and herbs
A different but very tasty version of stuffed aubergines which will please you and the family. We get away from the classic version of the onion or the ground beef stuffing and we use bulgur instead, full of aromatic spices and herbs for extra flavour. The Greek "Tsakonikes" aubergines (or the Japanese variety) are ideal for this recipe but the classic plum aubergines work well too

Grilled potato "souvlaki" with mustard and balsamic vinegar dressing
This is a clever idea and a delicious side dish to serve with any fish, meat and poultry dishes cooked in the grill or on the BBQ! The potatoes become so tasty with the mustard dressing on top

Potato and fennel fried balls with capers and tomato salsa
Another appetizer to enjoy along with your wine, ouzo or beer! Fluffy and delicious balls, full of Greek Summer (but not only) aromas. If you don't like fennel feel free to substitute with dill. The potato balls will still be delicious

Seafood moussakas with aubergines and courgettes
Here we have a really rich in flavours (and ingredients) version of Moussaka! Rather unusual combination the crayfish with the rest of the ingredients but, trust me, with a great taste! In this version courgettes are also added next to the classic combination of aubergines and potatoes

Tart with fresh figs and lemon marmalade
Figs are in season and in this recipe they go perfectly well with the lemon marmalade enjoying a very tasty fruit tart! You can substitute the lemon with a 3 citrus fruits marmalade or with some sweet/sour "dessert spoon" sweet like bergamot orange (300gr.) which you will mash first in a blender. If you can't get bothered with the home made pastry you can always use store-bought shortcrust or puff pastry
